Weekly Meals – Oct. 24 – 29, 2021

Ahhhh, I’m behind on my weekly meal posts… I had to deal with prepping for a medical procedure last week, so I failed to carve out time to write this. But here are the meals from the week of Halloween – still continuing down the path of increased fiber intake. Here’s what I made and ate! And now I’m including recipe links in case y’all wanna try anything here (:

  • Chicken, broccoli and brown rice with Green Goddess sauce
    • I’ve had Green Goddess sauce once at my sister’s house, and it was DELICIOUS. However, when I tried making it, I made some substitutions that I probably shouldn’t do ‘cause it changes and tastes more like a pesto sauce. Next time!
  • Chicken burrito wraps
  • Green Goddess grilled cheese
    • Oh my goodness… who knew a sandwich could be so rich with flavor. This was relatively easy to make, but I didn’t use a brioche bread, like the recipe said to use. My grocery list is made with the idea of using all the items in overlapping recipes versus one-time use and wasting food. I don’t know if I would make this again only because I don’t think I made it well enough. This is something I would entrust a restaurant chef to make more decadently.
  • Baked chicken with kale caesar salad (made by my mom)
    • So, this is a recipe I can’t share ‘cause I’ve never made it myself, but my mom makes this so well. Everything is in synergy and tastes amazing. She used to make the Caesar salad with romaine lettuce, but one random day she tried it with kale and now it’s what I request all the time. YUM!

I’m pretty proud of myself that I made healthier meals than I usually do and embraced brown rice instead of white jasmine rice. It’s definitely an adjustment, but at the end of the day it is better for me.

Weekly Meals – Oct. 17 – 22, 2021

It… has been a hella rough week. And one of the things I exercise regularly is indulging in one of the seven sins: gluttony. Namely, I ordered myself a large pizza to eat down my feelings. It’s weird, though, because sometimes when I’m depressed, I either gorge myself with food or I go in the opposite direction and don’t eat at all. Either way, I tried to continue building my healthier eating habit, but it was a challenge.

Here’s what I ate/cooked this week:

  • Yellow rice and chicken
    • This recipe was given to me by one of my buddies via TikTok, so… yeah LOL because I don’t have that big of a stomach, this dish lasted me three meals.
  • Pizza Hut $10 Tastemaker large 3-topping deal (pepperoni, green bell pepper and mushroom)
  • Salmon, avocado, rice
  • Onigiri with salmon filling
    • Yo, I’m so happy I purchased the tool to make onigiri, but holy crap, it’s A LOT of rice. Essentially I ate the entire rice cooker’s worth of rice in one sitting. It feels disgusting, so lesson learned, a person should only eat one onigiri, not three. Although, I did get a smaller onigiri mold size.
  • Spicy shrimp vermicelli
    • This was spur of the moment and a combination of two TikTok recipes I saw, and YIKES, it is super spicy. Eating only half the serving pictured here had me wanting so much water. But what else can you expect when there’s chili powder, sriracha and red pepper flakes…

Not the most exciting of meals this week, but I’m determined to continue the journey of eating much healthier.

Weekly Meals – Sept. 6 – 10, 2021

The past few weeks have been incredibly rough, battling depression and tough times. My appetite and motivation to eat fluctuate and go to extremes of not eating to overeating and binging — there is no in between.

It takes one day at a time, and this week, I was able to successfully do the following:

  • work out every day
  • cook meals every night, avoiding spending money on fast food
  • make dinners without red meat (except my two slices of ham every morning with my avocado toast)

Hopefully this week’s wins are the start of good, positive habits. Anyway, here are the things I cooked this week, and yes, I am now horrid TikTok trash and got most of these recipes from videos – minus the salmon, avocado, rice, which I’ve already started making on my own.

  • Vietnamese spring rolls
  • Crispy tofu
  • Snack item: vegan chocolate ice cream with fresh sliced strawberries
  • Salmon, avocado, rice
  • Rice paper tofu dumplings
    • What I learned: I made these once with two wrappings, like the recipe said, but tried to do it with one wrapping this time. The paper breaks on the pan, so do wrap it twice!
  • Impromptu lunch: Egg-Kewpie mayo ramen
  • Treat for myself: sushi dinner from Ginza in Galleria

That all said, I noticed I coincidentally planned these meals without meat, and then next week is all meat… I don’t know what that means but it’s a little funny.

Weekly Meals – Jan. 23 – 30, 2021

This week has been INSANE. There is so much going on, and I’m starting to struggle to keep up. I… may or may not have had a few cheat meals this week and skipped some workout days…

But anyway, here are the tasty meals I enjoyed, made by me, friends and family:

  • Kimchi soondubu jjigae
    • What I learned: generic grocery store brand kimchi is not as effective or flavorful as authentic kimchi from Asian grocers.
  • Agedashi tofu
    • What I learned: READ the recipe and don’t mix up your frying oil LOL
  • Gumbo | Canteen & Cocktails virtual cooking class
    • What I learned / note for virtual chefs: A word of advice if you are teaching a class: please consider your audience. Sure, there might be cooks among the class, but there might also be those who don’t cook often. Not pictured are baked oysters, because I threw them out. They really out here telling me to take good, ample care of fresh oysters prior to cooking them AND THEN cook them right? That’s a lot of responsibility.
  • Fancy ramen | made by a friend
  • Korean BBQ feast with family

It just dawned on me that the theme for this week’s dishes was TRYING NEW RECIPES! Aside from the not-pictured cheat meals I treated myself to, every day I was cooking food I hadn’t tried before, aka the jjigae, tofu and gumbo. These are much more involved recipes – not fit for just one solo person – so I probably won’t have them in my regular meal planning rotation, unless I know I’m cooking for people 🙂

Weekly Meals – Jan. 17 – 23, 2021

So far, 23 days into January, I’ve kept up with a consistent workout and healthy meal plan, and I want to start documenting them on my blog to track the progress and potentially provide anyone with new ideas for cooking!

Right now, during the COVID-19 pandemic, I’m only going to the grocery store every other weekend, so I’m meal planning for two weeks. Wasting food makes me sad, so what I try to do is look at recipes that have overlapping ingredients so I’m utilizing the most of my groceries – namely produce. It can be challenging, but it’s like a puzzle that you piece together!

This week, I cooked these dishes:

  • Guacamole, salsa and paleo chips
  • Spinach tofu stir fry
  • Veggie spaghetti with homemade spinach pesto
  • Salmon, avocado and rice
  • Ribeye steak, broccoli and rice — my parents got me a new iron skillet for Christmas so I HAD to try it out on the steak!
  • Almond milk chocolate chip pancakes with fresh strawberries and honey

Admittedly, I had more rice than I usually eat. For years, I tried to cook and genuinely enjoy cauliflower rice, but it never appeals to me, and I end up not eating my entire meal.
