Weekly Meals – 1/30 – 2/8/22

And we’re back with more random meals! My goal is trying to find the right balance of incorporating more vegan/plant-based components to my meal plans. It’s not perfect, but I know I’m doing something right because I don’t feel super full or miserable after eating, which I have done after cooking and eating my own dishes before.

  • Green Goddess Dip
    • I’ve tried making this before, and I don’t remember it going well – on my part – so I tried it again! This time, it was a success! Except maybe it was too much liquid, but it still tasted good with chips, the toast, AND the avocado turkey melt as a spread!
  • Green Goddess Toast
  • Avocado Turkey Melt
    • Okay, I was OBSESSED with this sandwich and made it a few times. In between the slices are mashed avocado, spread of green goddess pesto sauce, tomatoes, spinach leaves, and pepper jack cheese melted onto deli turkey meat. Real talk, I had never tasted a sandwich that had so much taste bud harmony before. The only thing I will do differently in the future is buying bigger bread so there’s more surface area – this sandwich was a mess to eat but totally worth it.
  • Half Chipotle Chicken Bowl
    • This was supposed to be a regular veggie burrito bowl from the #GlowupSessions challenge, but I learned that red bell peppers don’t last long in the fridge 😦 so I had to think quick and make something impromptu. Chipotle-marinated chicken it was!
  • Korean BBQ Beef Brisket
  • Kimchi and Spicy Pork Ramen

What’s coming up next for my meal plans? I’m challenging myself to eat kimchi with every dinner dish. There are rumors that eating kimchi every day can “help lose weight,” so I’m curious if that’s true and if I see any difference. Trust me – I know I don’t need to lose weight, but I’d like to test it out! To be honest, I don’t think it’ll make a huge impact on me because it’s supposedly eating mainly white rice with kimchi only, but I’m a foodie so I’m making full-on plates with kimchi.

Random Meals – 1/16 – 1/28/22

To be perfectly honest, I’m struggling to share new food photos with y’all! I’m a creature of habit, and when I like something, I stick with it. Essentially I’m eating repeated meals, which are no fun to share over and over again. But here are six more!

  • Homemade Chipotle Chicken Bowl
    • This was very delicious, but oh my goodness it is A LOT of work. It’s mostly prepping all the sides and toppings on top of the marinating and cooking the protein. My favorite part of the dish, though, was making vegan sour cream (which I think consisted of mixing coconut yogurt, lemon juice and tapioca flour).
  • Crispy Tofu and Brown Rice
  • Salmon Crisp Chips
    • The salmon is supposed to be sushi-grade fresh salmon, however, I have not been able to make it to the Asian market. What I did instead was cook regular salmon fillet to medium rare!
  • Shrimp Spring Rolls
  • Bang Bang Shrimp
    • Fried shrimp is SO delicious, and I will never turn it down. This dish was also yummy, however, it’d probably be better cooking it the way it’s instructed in the recipe – with an air fryer. I fried the shrimp in vegetable oil, so it’s not the best healthy way to do it.
  • 8g Carb (Egg White Crust) Pizza
    • I wanted to like this recipe more than I did, but it’s honestly probably chef maker error because I didn’t cook the crust correctly. Trying to multitask by letting it sit on heat while I wash dishes was my mistake. The eggs got too fluffy versus thin and crispy for thin crust pizza. I’m down to try it again because of its appeal of being low carb!

Aside from these dishes, I’ve tried to bring even more plant-based and low-carb recipes onto my plate. That’s always been a focus for my diet regimen, but after all the doctors, surgeries and procedures in the last couple of years, I’ve stepped this up a notch to take care of my body even more. It’s no fun to hear bad news at all your medical appointments LOL

My #GlowupSessions Challenge Journey

It has been done! I completed the Blogilates two-week #GlowupSessions challenge, and I feel so great! How did I get here? Well, it was no picnic in the park. It was definitely a struggle and I thought about giving up early on, but I pushed myself to get through it. I’m glad I did ‘cause I haven’t felt this great bodily wise, mood wise, and mentally, and the challenge reinforced good habits of perseverance, consistency, determination and endurance.
